Once a quiz has been added to a shared library, can it be edited by more than one teacher with edit access?

Yes, but not simultaneously. Quizzes can only be edited by one teacher at a time. While a quiz is being edited, it will be locked from being edited by another teacher.

Will other people in a shared library have access to my students' results?

No, only quizzes are shared in a shared library. Results and Reports are not shared with other members of the Shared Library. Only the editor who launches and finishes the quiz has access to the results and reports.
